Ingredients:

- 2 boneless, skinless chicken breasts

- 4 cups mixed salad greens

- 1 cup cherry tomatoes, halved

- 1 cucumber, sliced

- 1/2 red onion, thinly sliced

- 1 avocado, diced

- 1/4 cup chopped fresh cilantro (optional)

- Juice of 1 lemon

- 3 tablespoons olive oil

- Salt and pepper to taste

Instructions:

1. Preheat your grill to medium-high heat.

2. Season the chicken breasts with salt and pepper on both sides.

3. Grill the chicken breasts for about 6-8 minutes per side or until cooked through. The cooking time may vary depending on the thickness of the chicken breasts. You can also use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

4. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Then, slice it into thin strips.

5. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, avocado, and cilantro.

6. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

7. Drizzle the dressing over the salad ingredients in the large bowl and toss gently to coat.

8. Divide the salad onto serving plates or bowls.

9. Top each serving with the sliced grilled chicken.

10. Serve the grilled chicken salad immediately and enjoy!
